Remove the puff pastry circles from the refrigerator. Working on the parchment-lined baking sheet, egg wash the 10-inch (25-cm) circle. Arrange the cooled roasted butternut squash in a fan pattern on the circle, leaving a 1-inch (3-cm) outer border. Next, evenly spread a layer of red bell pepper. Spoon the mushroom–onion–goat cheese mixture on top of the squash and red bell peppers. Lay the asparagus spears across the top of the goat cheese mixture. Using your hands, form the vegetables into a dome shape. Brush the border of the dough circle with egg wash. Lay the 12-inch (30-cm) circle of puff pastry over the mixture and press down all around the edges to completely seal the border. If the pastry circle is still too chilled and will not mold around the mixture, leave it to warm for a few minutes and then try again.
